Nancy Wilkins is an Home Economist teacher who
taught commercial cooking at the junior high level for eight years. Her
students prepared food on a weekly basis for the teachers and staff to
take home to their families. They also sold food in the school cafeteria
regularly.
Students were chosen for the program on the basis of their need for extra attention and help at school. A small portion of the students were mentally or physically handicapped. Making and selling good food was a great way to build self esteem and also gave the teacher opportunities to interact with the students in a non threatening way. In the process of teaching commercial cooking, a lot of information and inside tips and tricks were learned. These pages contain some of those items. |
